MONTASIO is an Italian hard pastry cheese produced in the Julienne Frioul-Vénétie region, in Italy. It is made from cow's milk and refined for at least four months. The Montasio is characterized by its cylindrical shape and its smooth crust, as well as by its yellow and friable dough. It has a soft and slightly salty taste, with notes of hazelnut and curd milk.
